#pancakesaturday🥞

I get a lot of people ask me how hard it is to make different pancakes.  Honestly, not hard.  The hard part is the kids changing their minds over and over and fighting about what they want. #reallife .  My favorite Saturday’s are when I make them something and it’s a surprise!  Our pancake pour bottle is packed for our move so lots of easy pancakes these days.  I use kitchen scissors a lot to shape things.  This weekend my nephews are over so it was a free for all 😂.

Fresh Corn Salsa

I never take the time to realize how lucky we are to live in Indiana.  America for that matter.  Always hearing the negative.  There is so much positive to celebrate.  Like fresh Gardens and Farmers Markets.  I couldn’t imagine living in a place where it is all concrete and no grass or cornfields.  

Our sweet babysitter and her family have the beat produce and our local farmers market has the BEST corn!  So I took advantage and made some yummy corn salsa. 

🌽 🍅 🧅 Corn Salsa 🌽🍅🧅

3 large tomatoes cubed and deseeded

1large onion diced

Kernels from 2 cobs of sweet corn preferably Aces High!

4 Jalapeño slices chopped

Cilantro

Salt

Pepper

Lime Juice

I stirred all together and crushed slightly with hamburger spatula (the one shaped like a star)

Enjoy with Tortilla Chips!

Fourth of July 🇺🇸
